stir fry tofu
I call this budgeted yet healthy meal! This is one of my favorite food growing up with lots of rice!!!
Ingredients
1 block of tofu
2 medium tomatoes (or more if you like)
1 medium onion
2 cloves garlic
1 bunch of bok choy, sliced (pechay in tagalog)
2 cubes of beef bouillon
cooking oil
salt and pepper to taste
3/4 c water
2 tbsp soy sauce
Direction
Fry tofu until brown. Cut in cubes then set aside. Heat oil in pan, saute garlic until brown, add onions, saute until caramelized, then add tomatoes. Simmer for a minute. Add sliced bok choy (pechay) and tofu, add water and soy sauce, simmer for 3 minutes, season with salt and pepper. Served with rice.
