Fondant Peterbilt - Groom cake


I made this cake in 1 1/2 day, but not actually the full 24 hrs. As per grooms' request...mocha frosting and a lot of it. The frosting of the base cake is mocha (well not really mocha because there is no chocolate in it, maybe i should call it cappuccino) and the truck filling is butter-cream since the cake itself is already blended with coffee. I baked and used pound cake for easy handling and cutting. This is my first fondant truck and i'm happy with it(",)



Here's the recipe for the cake and the frosting...I hope you will enjoy it!

Best ever Pound Cake
1 c butter (2 sticks)
1/2 c shortening
2 1/4 sugar
5 eggs
3 c cake flour (i have not tried APF)
1/2 tsp salt
1 tsp baking powder
1 c fresh milk (you can also use buttermilk...see NOTES)
1 tsp vanilla extract
1 1/2 tbsp instant coffee (optional..add this if you want coffee flavor on your cake)

Directions
I usually cream the shortening first to lessen the lumps and then add the butter. Mix until smooth. Gradually add sugar. Add the eggs. Stir dry the ingredients in a bowl, then add to the cream mixture, alternating flour and milk. Mix in vanilla. Pour into a greased and floured tube pan and bake in 320F for 1 hr and 20 mins., or until you poked it with a toothpick and comes out clean.

NOTES:
I cracked all the eggs together in a bowl and then add it in the cream sugar mixture as the mixer is running because if you over beat the batter, it's not going to come out good. At least that's what i have experienced.
On the milk option, i noticed that if you use buttermilk, the cake is a little bit hard but still taste good. You can try to damp it with water sugar vanilla mixture if you want it moist. And you can also make s hard cookie on it if you use buttermilk, and it taste pretty good as i have tried it (accidentally...i left it in the oven too long).

Frosting
1/2 c shortening
1/2 c butter
2 c confectioners's sugar
1 tsp vanilla
2 tbsp heavy cream
1 tbsp instant coffee (optional)

Again, I creamed the shortening first and then i added the butter. While whisking, add the powdered sugar and the vanilla. Whisk until smooth. Stir in heavy cream, just use an egg whisker. If you want coffee flavor in the frosting just add 1 tbsp instant coffee in the heavy cream and mix thoroughly, then stir into the cream mixture.
